I started eating raw because a two-week juice cleanse helped me to heal my depression and lose a very good amount of weight, mostly from the stubborn fat areas of my body like the abdomen. I knew when I was finished with my cleanse that I would need to share this kind of food and juicing with Hot Springs. I've always wanted to own a restaurant, but being a single mom, it was all I could do to get by, much less invest in an endeavor. Fortunately, I made a few thousand dollars by doing an aspirin commercial, and put it all into getting the food truck off the ground. When the opportunity arose to open a restaurant at a great bargain, my partners and I didn't want to pass it up.
Fast forward six months later, and the building had more repairs than I even care to think about now. We were able to pay the mortgage this month, but until we find a financial solution, all work has been stopped on the building--and we've still got a major plumbing job to do, which will require much more time. To remedy having no income at the moment, we arranged with a local church to use their commercial kitchen. Tomorrow, we begin delivering a tiny selection of our juices and food. Each week, we will offer up some of our most popular sellers, and hopefully we can stay afloat this way. It's a long shot, but I have way too much riding on everything for it not to.
