However, I also know now, after years of yo-yo dieting, that tomorrow morning I'll send some kale, cucumber, an apple, some lemon, a piece of ginger, and a handful of fresh herbs through the little chute of my lovely juicer, and it will start me back on an actual physical desire to step it back up and eat what makes me feel good. A very wise person once said that "Nothing tastes as good as thin feels". Of course, this may seem like a shallow statement, but when you feel good on the inside--light and energized--that cream-filled donut loses all its appeal. Which brings me to an age-old adage, "You don't have anything if you don't have your health". Less shallow, no? Still true, nonetheless.
As we continue on our journey, outfitting our food truck in just the right way to make sure we're putting out consistent, quality products, I can hardly wait to open our window to our guests for the first time. There's nothing like seeing someone try a gourmet raw food dish for the very first time and watch them realize that, yes, raw vegan food can taste amazing and still be awesome for you. There's nothing like knowing that what you've fed someone has improved their overall quality of life and their outlook on food itself. And, still more, there's nothing like inspiring those people to come back and share it with others because they, too, are sold on the benefits of a raw food lifestyle. These visions are what makes this mad-dash effort we are undertaking completely worthwhile. Because as another very wise person once said, "When you inspire one person you have already changed the world". There can't be a better mission than that.
