Doctors have been telling us for years, and lately even more, to add more fresh fruits and veggies to our diets. That doesn't mean stuff you find in a can, or things that have been boiled or fried to no recognizable origins. Even I don't like to buy a salad when I go out to eat, so I thought I'd bring something other than perceived rabbit food to the table. The food we have at In the Raw Test Kitchen & Juice Bar are plays on your favorite comfort foods, and some new ones, too. We've gathered flavors from around the world, minimally processed them in ways that are completely unconventional, and come up with a menu that I am sure can please any palate.
Hot Springs is not exactly full of plant-based restaurants, and there are definitely no raw food restaurants, so I feel there is a market. Millennials today are converting to veganism in record numbers, and as the diabetes and heart disease epidemics continually rise, people are realizing that food truly plays in part in overall well-being. Not only has a raw vegan diet been known to help cancers go into remission, it has helped heal countless people of their diabetes (once said to be irreversible), helped people with rapid, healthy weight loss, and improved mental health in patients.
There is a science behind the healing power of raw food. By not heating our food above 118 degrees, we keep all of the living enzymes in the food we serve, so you can benefit. When the enzymes are intact, all the life-force of these plants gets absorbed by you when you eat them. You'll finish your meal and feel light and energized, not stuffed and lethargic. You won't need to grab a cup of coffee after lunch just to make it to the end of the workday, and guess what? You will even sleep better at night without that extra caffeine hanging out in your system.
I myself was skeptical that I could actually get enough to eat on a raw vegan organic diet without getting tired of chewing. I was wrong. Not only am I happily satisfied, as a hard-core foodie, I am constantly astounded at the flavors of new fruits and vegetables and the ways to combine them that makes you forget there's not an animal product in sight (or belly).
It's four weeks until our Grand Opening. I can't wait to be able to share my love of organic raw food with our customers and to help educate those who are truly looking for a complete dietary lifestyle change. One thing I do know is that our menu will be like nothing they can find anywhere else in the State of Arkansas. For that, I'm thrilled.
